2018 Sabino Chardonnay
We ferment our Sabino Chardonnay in a mixture of French oak and an egg-shaped concrete tank. Because we let it ferment naturally, it takes a long time to finish fermentation. We also bottle it later than most Chilean Chardonnay producers. By waiting, we let the vineyard, soil, and grape speak more clearly.
The minerality explodes in this wine. The mouthfeel has a character to it not seen before in our Chardonnay. A wine for enjoyment, it can be sipped on its own, accompanied by conversation. But a pasta al dente with grilled mushrooms or a salad with grilled root vegetables, would go perfectly as well. Read more in Amael's tasting notes ››
