We ferment our Sabino Chardonnay in a mixture of French oak and an egg-shaped concrete tank. Because we let it ferment naturally, it takes a long time to finish fermentation. We also bottle it later than most Chilean Chardonnay producers. By waiting, we let the vineyard, soil, and grape speak more clearly. 

2015 was an early, warm vintage. Flavors were good and acids high. Some toasted almond and yeasty notes come out on the midpalate, resulting in good energy and “cut”.
