2014 Sabino Chardonnay
We ferment our Sabino Chardonnay in a mixture of French oak and an egg-shaped concrete tank. Because we let it ferment naturally, it takes a long time to finish fermentation. We also bottle it later than most Chilean Chardonnay producers. By waiting, we let the vineyard, soil, and grape speak more clearly.
Sabino tastes like Chardonnay in its more citrusy, flinty, stony form. Like many Chilean wines, it has a hint of smokiness and savoriness that adds interest. In addition to the concrete, some of the wine is aged in used French oak barrels as well as a touch of new oak, which lends a bit of toastiness. Subtle, by New World standards.
